Breakfast muffins
2 cups whole wheat pastry flour
1/4 cup ground flax
1/4 tsp ginger
1/4 tsp nutmeg
1 1/2 tsp cinnamin
1 1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 small 16 oz can pumpkin
1/2 cup brown sugar
1/2 cup honey
1/2 cup milk
3 tb oil
2 eggs
1 1/4 cup frozen blueberries (do not thaw)
3/4 cup walnuts
place all dry ingriedients including walnuts in blender- pulse til walnuts are chopped
in large bowl mix wet except blueberriesfold dry into wet, add blueberries- stir as little as possible- fold in blueberries
put in greased muffin tin- they will be very full!12 muffins- 350 22-28 minutes

250 calories per muffin
